Layered over a hearty base of tri-colored quinoa and pearled barley, we've combined a bounty of spring veggies including sugar snap peas, fava beans and peppery watercress. The brilliant fuchsia of watermelon radish, which we've pickled along with red onion, bring more than just striking color. They also add brightness and zing to this protein-packed meal, that is rounded out with a salty crumble of Ricotta Salata cheese and crunchy toasted almonds. Toss the whole bowl with our bright green herb-packed (and Greek Yogurt-based) Green Goddess dressing, and you've got yourself a complete meal that is sure to put a spring in your step for the rest of the day!

Fun fact, Quinoa, a nutrient-rich seed, is considered a complete protein source, meaning it contains all nine essential amino acids. And Barley, is a great source of fiber and loaded with the antioxidants that can help with cell damage.

Ingredients Storage Tips
Water, Fava Beans, Dry Quinoa, Yogurt, 5% Milkfat, Greek, Strained, Snap Peas, Ricotta Salata, Pearled Barley, Sliced Almonds, Watercress, Red Onion, Cilantro, Italian Parsley, Dill, Lemon Juice, Mint Leaf, Radish, Thyme, Garlic, Apple Cider Vinegar, White Sugar, Kosher Salt, Peppercorns, Black Pepper, Bay Leaf
Keep Frozen. Thaw overnight in the fridge. Remove lid, toss with the Green Goddess dressing and sprinkle with the Almonds. Enjoy chilled or at room temperature. Container and lid are both compostable.
